As the base rice, I used Koshihikari from Fukui prefecture because I was impressed by the deliciousness of the rice when I visited Fukui prefecture. We order it with brown rice and polish it at the shop every morning. When combined with black rice, it creates a bubble wrap texture and goes well with the recommended curry. Roux with various ingredients and spices is not heavy at any time and has a light and rich taste.
